Crazy Mandarin

If you can make limoncello from lemons, and orangecello from oranges, what can you do with a mandarin? So we set out to strip mandarins of their fragrant outer peel to make mandarin-o-cello. But what do you do with all those peeled organic mandarins? Well, you mash them, ferment them together with some sugar to feed the yeast well, and then distill the mixture twice in the still. And that results in this smooth and flavorful eau-de-vie, clearly made from mandarin (40%).
